This project is the outcome of my typographic exploration for the 2018 istd brief ‘Food for thought’. By looking at my own personal favourite Israeli foods, I started investigating dishes where there is a disagreement and different claims about their origins in my home country.
Hummus is a fundamental feature of Levantine cuisine. A simple, everyday dish consumed across different countries and cultures. In Israel, Lebanon and Palestine it is considered a national dish. As a basic culinary component shared by countries who are often on hostile terms, hummus has acquired a symbolic political dimension. The adoption of this essentially Arabic food by Israelies reflects the social, cultural and political history of the Israeli state and society.
